Cocoa Fruit Harvesting - Cocoa bean Processing - Cocoa Processing To Make Chocolate in Factory
Small, delicate cocoa trees were first cultivated by the Mayans and then the Aztecs. They grow around the equatorial belt. The fruit of the cocoa tree, the pod, contains up to 40 beans. Hernan Cortes was the first to bring cocoa beans to Spain in the early 16th century. Cocoa beans were turned into cocoa paste to produce an exceptional beverage and, from the 19th century, solid bars of chocolate.

Ghana Grows Our Cocoa, So Why Can’t It Make Chocolate? | Big Business
In 2021, Ghana grew 1 million tons of cocoa. But it exported most of that to Europe and North America, where it was turned into chocolate. And the big bucks are in chocolate. Trapped in a trade relationship with Europe and struggling to process chocolate itself, Ghana sees little of the industry's profits. So as chocolate companies rake in billions, cocoa farmers struggle to make a living income. We went to Ghana to see the impact on farmers and learn how local entrepreneurs are trying to keep chocolate dollars inside their country.

Cacao Farm Comparison | Ep.82 | Craft Chocolate TV
For this episode we're in the Dominican Republic analyzing a cacao farm. This style of cacao farming is not only typical to the Dominican, but in many cacao growing regions. Pruning cacao trees from a young age requires a lot of work, so many farmers opt out of this constant maintenance. But by the time trees are 5-10 years old the cacao pods are already out of arm's reach, making them more difficult to harvest. Dylan compares this cacao farming model to what we've been doing on our own farms in Hawaii.
